Ingredients

  • 4 medium zucchini
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • 1 medium onion
  • 2 cloves garlic
  • 0.5 cup heavy cream
  • 4 ounces cream cheese
  • 1.5 cups cheddar cheese
  • 0.5 cup parmesan cheese
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Slice the zucchini into thin rounds and place them in a bowl. Sprinkle with 1 teaspoon of salt and toss gently to coat evenly. Let them sit for about 10 minutes to draw out excess water.

Meanwhile, finely chop the onion and mince the garlic. In a skillet over medium heat, add olive oil and sauté the onion for about 3-4 minutes until translucent. Add the garlic and sauté for another 1 minute until fragrant.

In a small saucepan, combine the heavy cream and cream cheese over medium-low heat. Stir until the cream cheese is fully melted and smooth. Remove from heat.
