Ingredients

  • 1 medium Cauliflower head
  • 2 tablespoons Olive oil
  • 2 tablespoons Butter
  • 0.25 cup Heavy cream
  • 1 cup Shredded cheddar cheese
  • 4 slices Bacon slices
  • 2 stalks Green onions
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Cut the cauliflower head into florets and discard the core and leaves.

Step 3

Boil the cauliflower florets in a large pot of salted water for about 10 minutes or until tender. Drain well.

Step 4

While the cauliflower is cooking, place the bacon slices in a skillet over medium heat and cook until crispy. Remove bacon from the skillet, crumble, and set aside.

Step 5

In a large mixing bowl, combine the drained cauliflower, butter, heavy cream, salt, and black pepper. Use a potato masher or immersion blender to mash the mixture until smooth.
