Ingredients

  • 8 large eggs worth egg whites
  • 1 cup fresh spinach

  • 2 tablespoons green onions
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon olive oil or cooking spray

Directions

Step 1

Preheat the oven to 350°F (175°C).

Apply olive oil or cooking spray to a 12-cup muffin tin to prevent sticking.

Step 3

In a medium-sized skillet, add a small amount of olive oil over medium heat.
