  • 1 teaspoon Chili powder
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 200 grams Shredded cheddar cheese
  • 4 large Low-carb tortillas
  • 0.25 cup Fresh cilantro, chopped
  • 0.5 cup Sour cream

Directions

Step 1

Begin by cutting the cauliflower into small florets. Place the florets in a food processor and pulse until they resemble rice grains; set aside.

Step 2

In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, sauté for about 2-3 minutes until the onion is translucent and fragrant.

Add the cauliflower rice to the skillet, stirring frequently, for about 5-7 minutes or until the cauliflower is tender but not mushy.
