Ingredients

  • 4 cups cauliflower florets
  • 6 slices bacon, chopped
  • 2 tablespoons butter

  • 1 cup heavy cream
  • 4 ounces cream cheese, softened
  • 1.5 cups sharp cheddar cheese, shredded
  • 0.5 cup Parmesan cheese, grated
  • 1 teaspoon fresh thyme, chopped
  • 0.5 teaspoon smoked paprika
  • 0.25 teaspoon ground black pepper
  • 0.5 teaspoon salt
  • 2 tablespoons green onions, chopped

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large pot, bring salted water to a boil. Add cauliflower florets and boil for about 6-8 minutes, until tender but not mushy. Drain and set aside.

In a large skillet over medium heat, cook chopped bacon until crispy. Transfer to a paper towel-lined plate to drain, leaving about a tablespoon of bacon fat in the skillet.
