Ingredients

  • 200 grams fresh spinach
  • 120 grams cream cheese
  • 100 grams feta cheese
  • 1 large egg, beaten
  • 150 grams mozzarella cheese, shredded
  • 100 grams almond flour
  • 1 teaspoon baking powder
  • 30 grams butter, melted
  • 1 large egg, for egg wash
  • 2 tablespoons sesame seeds, optional
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Preheat the oven to 180°C (350°F). Line a baking sheet with parchment paper.

Step 2

In a large pan over medium heat, wilt the spinach by stirring frequently for about 3-4 minutes. Remove from heat and let cool. Once cool, squeeze out any excess moisture and chop finely.

In a mixing bowl, combine the chopped spinach, cream cheese, and feta cheese. Add the beaten egg, salt, and black pepper, and mix until well combined. Set aside.

In another bowl, mix the almond flour and baking powder.

In a microwave-safe bowl, combine the mozzarella cheese and melted butter. Microwave for about 1-2 minutes, stirring every 30 seconds until melted and smooth.
