Ingredients

  • 2 cups Almond flour
  • 2 cups Mozzarella cheese
  • 2 tablespoons Cream cheese
  • 1 large Egg
  • 0.5 teaspoon Salt
  • 2 cups Fresh spinach
  • 0.5 cup Feta cheese
  • 1 tablespoon Olive oil
  • 0.25 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder
  • 1 Egg wash (egg beaten with water)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

In a microwave-safe bowl, combine the mozzarella cheese and cream cheese. Microwave for about 1 minute, or until the cheese is melted and can be stirred together easily. Stir well.

Step 3

Add the almond flour, egg, and salt to the cheese mixture, mixing until a uniform dough forms.

Step 4

On a clean surface, lay out a large piece of parchment paper and lightly sprinkle it with almond flour. Place the dough on the parchment paper and cover with another piece of parchment. Roll out the dough to a thickness of about 1/4 inch.

Step 5

In a skillet over medium heat, add the olive oil and sauté the fresh spinach until wilted. Season with black pepper and garlic powder, then remove from heat.

Step 6

Allow the spinach to cool slightly before mixing it with the feta cheese in a small bowl.

Step 7

Cut the rolled dough into squares (about 4 inches on each side). Place approximately one tablespoon of the spinach and feta mixture onto each square.

Step 8

Fold each square into a triangle, pressing the edges together to seal. Use a fork to crimp the edges for a better seal.

Step 9

Place the borekas on the prepared baking sheet. Brush the tops with the egg wash to help them brown.

Step 10

Bake in the preheated oven for 20-25 minutes, or until the borekas are golden brown.

Step 11

Remove from the oven and allow to cool slightly before serving. Enjoy warm or at room temperature.
