Ingredients

  • 1 pound Ground beef
  • 0.5 cup Almond flour
  • 0.25 cup Parmesan cheese, grated
  • 1 unit Egg, large
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 4 ounces Mozzarella cheese, cubed
  • 2 tablespoons Olive oil
  • 1 cup Marinara sauce, keto-friendly
  • 2 tablespoons Fresh parsley, chopped (optional for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large mixing bowl, combine ground beef, almond flour, grated Parmesan cheese, egg, garlic powder, onion powder, Italian seasoning, salt, and black pepper. Mix the ingredients thoroughly until well combined.

Step 3

Take about 2 tablespoons of the meat mixture and flatten it into your palm. Place one cube of mozzarella cheese in the center and gently shape the meat around the cheese, forming a ball. Repeat the process with the remaining meat and cheese.

Step 4

Heat olive oil in a large oven-safe skillet over medium heat. Add the meatballs to the skillet and brown them on all sides, about 5 minutes in total.

Step 5

Once browned, pour the marinara sauce over the meatballs.

Step 6

Transfer the skillet to the preheated oven and bake for 15-20 minutes or until the meatballs are cooked through and the cheese is melted.

Step 7

Remove the skillet from the oven and let the meatballs cool slightly before serving.

Step 8

Garnish with fresh parsley if desired and serve hot.
