Ingredients

  • 2 ears Fresh corn on the cob
  • 2 tablespoons Olive oil
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Fresh lime juice
  • 2 tablespoons Chopped fresh cilantro

Directions

Step 1

Husk the corn and remove all the silk threads. Use a sharp knife to cut the corn kernels off the cob.

Step 2

Preheat a large cast-iron skillet over medium-high heat.

Step 3

In a large bowl, combine the corn kernels, olive oil, smoked paprika, garlic powder, salt, and black pepper. Toss to evenly coat the corn with the oil and seasonings.

Step 4

Once the skillet is hot, add the seasoned corn in a single layer. Allow the corn to cook without stirring for 5 minutes to achieve a nice char.

Step 5

Stir the corn and continue cooking for an additional 5-10 minutes, stirring occasionally, until the corn is nicely charred and tender.

Step 6

Remove the skillet from the heat and stir in the fresh lime juice.

Step 7

Transfer the charred corn to a serving dish and garnish with chopped cilantro before serving.
