Ingredients

  • 500 g Chicken thighs (boneless, skinless)
  • 60 ml Soy sauce (low-sodium)
  • 60 ml Mirin (sugar-free alternative)
  • 60 ml Sake
  • 1.5 tbsp Erythritol
  • 5 stalks Green onions (scallions)
  • 2 tbsp Sesame oil
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 4 cups Keto-friendly rice (substitute such as cauliflower rice)
  • 8 pieces Bamboo skewers

Directions

Step 1

Soak bamboo skewers in water for at least 30 minutes to prevent burning.

Step 2

Cut chicken thighs into even bite-sized pieces and set aside.

Step 3

Prepare the tare sauce by combining soy sauce, sugar-free mirin, sake, and erythritol in a small saucepan over medium heat. Bring to a simmer, stirring until erythritol dissolves. Reduce heat to low and let it simmer for about 5 minutes to slightly thicken. Remove from heat and let it cool.

Chop the white and light green parts of the green onions finely. In a small bowl, mix chopped green onions with sesame oil, salt, and black pepper to create the negi shio sauce.
