Ingredients

  • 500 grams Pork shoulder
  • 2 tablespoons Soy sauce (low-sodium)
  • 2 tablespoons Sugar-free maple syrup
  • 1 tablespoon Sesame oil
  • 2 tablespoons Hoisin sauce (sugar-free)
  • 1 teaspoon Five-spice powder
  • 2 cloves Garlic, minced
  • 2 cups Almond flour
  • 1 quarter cup Coconut flour
  • 2 teaspoons Baking powder
  • 1 teaspoon Xanthan gum
  • 2 large Eggs
  • 170 grams Mozzarella cheese, shredded
  • 60 grams Cream cheese
  • 2 tablespoons Water

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.

Step 2

Cut the pork shoulder into small cubes. In a medium bowl, combine soy sauce, sugar-free maple syrup, sesame oil, hoisin sauce, five-spice powder, and minced garlic. Add the pork, toss to coat, and let marinate for at least 15 minutes.

Step 3

Spread marinated pork on a baking sheet and bake for 20 minutes, or until cooked through and slightly caramelized, stirring halfway.

Step 4

For the dough, melt mozzarella cheese and cream cheese together in a microwave-safe bowl. Heat in 30-second intervals, stirring in between, until smooth.

Step 5

In a separate bowl, mix almond flour, coconut flour, baking powder, and xanthan gum.

Step 6

Add the melted cheese mixture, eggs, and water to the dry ingredients. Mix with a spatula until a dough forms.

Step 7

Knead the dough a few times until smooth and then divide it into 8 equal parts.

Step 8

Flatten each dough ball into a small circle. Place a spoonful of the char siu pork filling in the center of each dough circle.

Step 9

Carefully gather the edges of the dough around the filling, pinching them together at the top to seal the bun.

Step 10

Place the formed buns seam-side down on the prepared baking sheet.

Step 11

Bake in the preheated oven for 20 minutes or until the buns are golden brown.

Step 12

Let them cool slightly before serving. Enjoy your delicious Keto Char Siu Bao!
