Start by preparing the marinade. In a medium-sized bowl, combine the soy sauce, keto-friendly hoisin sauce, rice vinegar, sesame oil, minced garlic, finely chopped ginger, erythritol, and five-spice powder. Mix well.
If using, add a drop of red food coloring to the marinade to give the pork the traditional red hue.
Cut the pork shoulder into strips about 1.5 inches wide. Place the pork in a resealable plastic bag or a shallow dish and pour the marinade over it.
