Ingredients

  • 2 pounds pork tenderloin
  • 0.5 cup coconut aminos
  • 2 tablespoons keto-friendly sweetener (erythritol or allulose)
  • 2 tablespoons hoisin sauce, sugar-free
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon garlic powder
  • 0.5 teaspoon Chinese five-spice powder
  • 0.5 teaspoon ground ginger
  • 4 drops red food coloring (optional)

Directions

Step 1

Slice the pork tenderloin into 2-inch wide strips for even cooking and marination.

Step 2

In a mixing bowl, combine coconut aminos, keto-friendly sweetener, sugar-free hoisin sauce, sesame oil, rice vinegar, garlic powder, Chinese five-spice powder, ground ginger, and optional red food coloring. Mix well to ensure the sweetener is fully dissolved.

Step 3

Place the pork strips in a resealable plastic bag and pour the marinade over the pork. Seal the bag, removing as much air as possible, and massage the marinade into the pork.

Step 4

Refrigerate the pork for at least 2 hours, or overnight for the best taste infusion.

Step 5

Preheat your oven to 375°F (190°C). Place the marinated pork on a wire rack atop a baking sheet to allow for even cooking.

Step 6

Roast the pork in the oven for 30 minutes. After 30 minutes, turn the pork strips over and baste them with leftover marinade.

Step 7

Increase the oven temperature to 425°F (220°C) and roast for an additional 15-20 minutes until the edges start to caramelize and the internal temperature of the pork reaches 145°F (63°C).

Step 8

Once cooked, remove the pork from the oven and let it rest for 10 minutes before slicing into thin strips.

Step 9

Serve warm as a main dish or let it cool for keto-friendly wraps or salad toppings.
