Ingredients

  • 400 ml unsweetened coconut milk
  • 60 g erythritol sweetener
  • 1 tsp pandan extract
  • 50 g coconut flour
  • 10 g psyllium husk powder
  • 200 ml cold water
  • 5 g gelatin powder
  • 100 g ice cubes

Directions

Step 1

In a small saucepan, combine the unsweetened coconut milk and 30g of erythritol. Heat gently over medium-low heat until the erythritol dissolves. Set aside to cool.

Step 2

In a bowl, mix the coconut flour, psyllium husk powder, and gelatin powder. Slowly whisk in the cold water until well combined.

Step 3

Add the pandan extract to the flour mixture for color and flavor, and whisk until homogeneous.

Step 4

Place this mixture into a saucepan over low heat. Stir continuously for about 10 minutes, until the mixture thickens and starts to pull away from the sides of the pan. Remove from heat.

Step 5

Transfer the mixture to a piping bag with a small round tip or a cendol press for shaping.

Step 6

Pipe or press the cendol over a bowl of cold water to form small worm-like strands. Allow the cendol to set in the cold water for a few minutes.

Step 7

To assemble, split the cendol into 4 serving glasses. Add ice cubes to each glass.

Pour the sweetened coconut milk over the cendol and ice in each glass.

Sprinkle the remaining erythritol on top if desired for extra sweetness.
