Ingredients

  • 1 head Cauliflower
  • 2 tablespoons Olive oil
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 whole Avocados
  • 1 whole Lime
  • 0.25 cup Fresh cilantro
  • 8 whole Low-carb tortillas
  • 0.5 cup Sour cream (optional)
  • 1 cup Cherry tomatoes
  • 0.5 cup Red onion

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

Cut the cauliflower head into small florets.

Step 3

In a large mixing bowl, combine olive oil, cumin, paprika, chili powder, garlic powder, salt, and black pepper.

Add the cauliflower florets to the bowl and toss until they are evenly coated with the spice mixture.
