  • 1 medium head Cauliflower
  • 2 tablespoons Olive oil
  • 3 cloves Garlic
  • 1 tablespoon Ginger
  • 3 tablespoons Soy sauce
  • 1 teaspoon Sesame oil
  • 1 large Red bell pepper
  • 1 medium Zucchini
  • 3 stalks Green onions
  • 2 large Eggs
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 cup Sliced almonds

Directions

Step 1

Begin by preparing your ingredients: Cut the cauliflower into small florets, then pulse them in a food processor until they resemble rice grains. Dice the red bell pepper and zucchini, mince the garlic cloves and ginger, and slice the green onions.

Step 2

Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add the sliced almonds and toast them for 2-3 minutes until golden brown. Remove the almonds from the skillet and set them aside.

In the same skillet, add the remaining tablespoon of olive oil. Add the minced garlic and ginger, and sauté for about 1 minute until fragrant.
