Ingredients

  • 1 medium head Cauliflower florets
  • 1 large Egg
  • 1 cup Mozzarella cheese
  • 0.25 cup Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon Garlic powder
  • 0.25 teaspoon Salt
  • 0.5 cup Marinara sauce
  • 0.5 cup Shredded mozzarella cheese
  • 0.25 cup Pepperoni slices
  • 8 whole Fresh basil leaves

Directions

Step 1

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

Cut the cauliflower into florets and place in a food processor. Pulse until finely grated and rice-like consistency is achieved.

Step 3

Transfer the riced cauliflower to a microwave-safe bowl and microwave on high for 5 minutes. Allow to cool slightly before handling.
