  • 1 large head Cauliflower florets
  • 2 units Large eggs
  • 1 cup Shredded mozzarella cheese

  • 0.5 teaspoon Salt
  • 0.5 cup Pizza sauce
  • 0.75 cup Additional shredded mozzarella cheese
  • 0.5 cup Pepperoni slices
  • 0.5 unit Bell pepper, thinly sliced
  • 0.5 cup Mushrooms, sliced
  • 0.25 cup Black olives, sliced
  • 0.25 cup Fresh basil leaves

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

Cut the cauliflower into florets and place them in a food processor. Pulse until you get a rice-like texture.

Transfer the processed cauliflower into a microwave-safe bowl and microwave on high for about 4-5 minutes, or until soft. Allow to cool.
