Ingredients

  • 1 large head Cauliflower florets
  • 1 cup Mozzarella cheese, shredded
  • 0.25 cup Parmesan cheese, grated
  • 1 large Egg
  • 1 teaspoon Oregano, dried
  • 0.5 teaspoon Garlic powder
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and set aside.

Step 2

Wash and chop the cauliflower into florets. Transfer the florets to a food processor and pulse until you achieve a rice-like texture.

Step 3

Transfer the cauliflower rice to a microwave-safe bowl and microwave on high for 4-5 minutes, or until the cauliflower is tender.

Step 4

Once microwaved, place the cauliflower in a clean kitchen towel and allow it to cool slightly. When it is cool enough to handle, wrap the cauliflower in the towel and squeeze out as much moisture as possible.
