Ingredients

  • 3 medium carrots
  • 1 cup green cabbage
  • 0.25 small red onion
  • 0.25 cup fresh parsley
  • 0.5 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon stevia or keto-friendly sweetener
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon celery seed
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Peel the carrots and grate them using a box grater or a food processor. You should have approximately 2 cups of grated carrots.

Step 2

Finely shred the green cabbage until you have about 1 cup and place it in a large salad bowl.

Step 3

Thinly slice the red onion and add about 1/4 of it to the bowl with the cabbage.

Chop the fresh parsley finely and mix it into the vegetable mixture in the bowl.
