  • 3 medium Carrots
  • 3 medium Parsnips
  • 1 cup Heavy cream

  • 2 cloves Garlic
  • 1 cup Gruyere cheese, grated
  • 0.5 cup Parmesan cheese, grated
  • 1 teaspoon Fresh thyme leaves
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C).

Peel the carrots and parsnips, then slice them thinly into rounds about 1/4 inch thick.

In a large skillet over medium heat, melt the butter and add the olive oil. Mince the garlic and add to the skillet, cooking for about 1 minute until fragrant.
