  • 2 pounds Beef chuck roast
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 1 large Onion, chopped
  • 4 cloves Garlic cloves, minced
  • 2 count Ancho chiles, dried and stemmed
  • 2 count Guajillo chiles, dried and stemmed
  • 2 teaspoons Cumin powder
  • 1 teaspoon Oregano, dried
  • 2 cups Beef broth
  • 0.25 cup Cilantro, chopped
  • 1 count Lime, cut into wedges

Directions

Step 1

Cut the beef chuck roast into 1-inch cubes. Season the beef pieces with salt and pepper.

Step 2

Heat olive oil in a large Dutch oven or a heavy-bottomed pot over medium-high heat. Add the beef cubes in batches to avoid overcrowding, and brown them on all sides. Remove the browned beef and set aside.

Step 3

In the same pot, add the chopped onion and sauté for about 5 minutes until translucent. Add the minced garlic and cook for another 1 minute until fragrant.

While the onions are cooking, toast the dried ancho and guajillo chiles in a dry skillet over medium heat for about 1-2 minutes per side until fragrant, being careful not to burn them.
