  • 2 tablespoons Butter
  • 2 tablespoons Apple cider vinegar
  • 3 tablespoons Erythritol sweetener
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper
  • 1 teaspoon Fresh thyme leaves
  • 2 large Garlic cloves

Directions

Step 1

Peel and slice the yellow onions into thin strips and set aside.

Step 2

Mince the garlic cloves finely and set aside.

Step 3

Heat the olive oil and butter in a large skillet over medium heat.

Step 4

Once the butter has melted and is sizzling, add the sliced onions to the skillet.

Step 5

Stir occasionally, cooking the onions until they are soft and translucent, about 15 minutes.

Step 6

Reduce the heat to low and continue to cook, stirring frequently, until the onions are deeply brown and caramelized, about 25 minutes more.

Step 7

Add the minced garlic and sauté for an additional 2 minutes until fragrant.

Step 8

Stir in the apple cider vinegar, erythritol sweetener, salt, pepper, and fresh thyme.

Step 9

Continue to cook for about 5-8 minutes, or until the mixture thickens slightly and the flavors meld together.

Step 10

Remove from heat and let the chutney cool.

Step 11

Transfer the chutney to a jar or airtight container and refrigerate. The flavors will continue to develop, and it can be enjoyed cold or at room temperature.
