Ingredients

  • 1 medium head Cauliflower
  • 2 tablespoons Olive oil
  • 2 cloves Garlic, minced
  • 1 teaspoon Ginger, minced
  • 3 Eggs
  • 1 cup Cooked chicken breast, diced
  • 1 cup Cooked shrimp, peeled and deveined
  • 2 tablespoons Soy sauce (or coconut aminos for strict keto)
  • 2 Scallions, chopped
  • 1 small Bell pepper, diced
  • 1 small Carrot, diced finely
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 teaspoon Sesame oil

Directions

Step 1

Cut the cauliflower into florets and pulse in a food processor until it resembles rice. Set aside.

Step 2

In a large pan or wok, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and ginger, sauté for about 30 seconds until fragrant.

Step 3

Add the bell pepper and carrot, stir-frying for 3-4 minutes until they start to soften.
