Ingredients

  • 150 grams almond flour
  • 50 grams Erythritol sweetener
  • 100 grams unsalted butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon salt

Directions

Step 1

Preheat your oven to 160°C (320°F) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, cream the softened butter together with the erythritol until it becomes a light and fluffy mixture.

Step 3

Add the egg and vanilla extract to the butter mixture, and mix well until fully combined.

Step 4

In another bowl, combine the almond flour, baking powder, and salt. Mix well to distribute the baking powder and salt evenly throughout the almond flour.

Step 5

Gradually add the dry ingredients to the wet mixture, stirring continuously until a dough forms. The dough should be soft but not sticky.

Step 6

Place the dough onto a piece of parchment paper and roll it out to a thickness of about 1/4 inch. If the dough is too sticky, you can dust it lightly with more almond flour.

Step 7

Use a rectangular or square cookie cutter to cut out individual butterkeks. Carefully transfer them to the prepared baking sheet using a spatula.

Step 8

Bake in the preheated oven for about 10-12 minutes or until the edges of the cookies begin to turn golden brown.

Step 9

Remove from the oven and allow the butterkeks to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Once cooled, enjoy your Keto Butterkeks with a cup of tea or coffee as a delightful low-carb treat!
