Ingredients

  • 1 lb ground beef
  • 3 cups cauliflower rice
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • 0.5 tsp garlic powder
  • 0.5 tsp paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 cup red onion
  • 1 medium bell pepper
  • 1 cup tomatoes
  • 0.5 cup cilantro
  • 2 avocados
  • 1 lime
  • 1 small jalapeño
  • 0.5 cup cheddar cheese
  • 0.5 cup sour cream

Directions

Step 1

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the ground beef and cook until browned, about 7-8 minutes. Drain excess fat.

Step 2

While the beef is cooking, season it with cumin, chili powder, garlic powder, paprika, salt, and black pepper. Stir well and cook for another 2 minutes. Remove from skillet and set aside.

Step 3

In the same skillet, heat the remaining 1 tablespoon of olive oil over medium heat. Add cauliflower rice and cook until soft and slightly golden, about 5 minutes.

While the rice is cooking, dice the red onion and bell pepper. Add them to the skillet with the cauliflower rice for the last 2 minutes of cooking.

To prepare the guacamole, scoop out the avocado flesh into a bowl. Mash it with a fork. Add lime juice, finely diced jalapeño, salt, and cilantro. Mix well.

Chop the tomatoes and remainder of the cilantro and set aside for garnish.

Sprinkle each bowl with the chopped tomatoes, red onion, and bell pepper, some cheddar cheese, and a dollop of sour cream. Garnish with extra cilantro.
