Ingredients

  • 3 pounds Pork belly
  • 2 tablespoons Kosher salt
  • 1 tablespoon Paprika
  • 1 tablespoon Garlic powder
  • 1 tablespoon Onion powder
  • 1 teaspoon Ground black pepper
  • 1 tablespoon Erythritol or keto-friendly sweetener
  • 2 tablespoons Olive oil
  • 1 cup Sugar-free BBQ sauce
  • 2 tablespoons Apple cider vinegar

Directions

Step 1

Preheat your grill or smoker to 250°F (121°C).

Step 2

Cut the pork belly into 1 1/2-inch cubes. Pat dry with paper towels to remove any excess moisture.

Step 3

In a large bowl, mix together the kosher salt, paprika, garlic powder, onion powder, ground black pepper, and erythritol.

Step 4

Toss the pork belly cubes in the spice mixture, ensuring each piece is evenly coated.

Step 5

Drizzle olive oil over the pork belly cubes and toss again to coat.

Step 6

Place the pork belly cubes onto a wire rack set atop a baking sheet.

Step 7

Place the baking sheet in the smoker or grill. Cook at 250°F for 2 to 2 1/2 hours, or until the pork is tender and a nice bark has formed on the outside.

Step 8

In a small saucepan, heat the sugar-free BBQ sauce with the apple cider vinegar over low heat until warm, stirring occasionally.

Step 9

Remove the pork belly cubes from the smoker and transfer them to a large bowl.

Step 10

Pour the warm BBQ sauce over the pork belly cubes and toss to coat them thoroughly.

Step 11

Return the sauced pork belly cubes to the wire rack and baking sheet.

Step 12

Continue cooking in the smoker or grill for an additional 1 to 1 1/2 hours, or until the sauce has caramelized and the edges are nicely crisped.

Step 13

Remove from the smoker and let rest for 10 minutes before serving.

Step 14

Serve the keto burnt ends hot, with extra sugar-free BBQ sauce on the side if desired.
