Ingredients

  • 1 lb chicken breast
  • 0.5 cup coconut flour
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp garlic powder
  • 1 tsp paprika
  • 1 egg
  • 0.25 cup heavy cream
  • 4 tbsp butter
  • 0.5 cup frank's red hot sauce
  • 2 tbsp olive oil
  • 0.5 cup blue cheese crumbles
  • 4 sticks celery sticks

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Slice the chicken breast into thin strips, about 1-inch wide.

Step 3

In a shallow bowl, mix together the coconut flour, salt, black pepper, garlic powder, and paprika.

In another bowl, whisk together the egg and heavy cream until well combined.

Step 5

Dip each chicken strip into the egg mixture, allowing any excess to drip off, then coat in the coconut flour mixture, pressing lightly to adhere.
