  • 1 large red bell pepper, cut into 1-inch pieces
  • 1 large green bell pepper, cut into 1-inch pieces
  • 1 medium red onion, cut into wedges
  • 1 medium zucchini, cut into 1/4-inch thick rounds
  • 8 pieces wooden skewers, soaked in water for 30 minutes

Directions

Step 1

Cut the chicken breasts into 1-inch cubes and set aside.

In a large bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, dried thyme, salt, and black pepper.
