Ingredients

  • 4 cups fresh broccoli florets
  • 8 slices cooked bacon
  • 1 cup sharp cheddar cheese
  • 0.5 medium red onion
  • 0.5 cup sunflower seeds
  • 1 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon erythritol sweetener
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Start by preparing the broccoli. Cut the florets into bite-sized pieces and blanch them by boiling in a pot of salted water for 1-2 minutes. Promptly transfer them to an ice bath to cool, then drain and pat dry.

Step 2

Chop the cooked bacon into small pieces and set aside.

Step 3

Grate the sharp cheddar cheese if it is not pre-shredded and set aside.

Step 4

Finely dice the half red onion and put it with the other ingredients.

Step 5

In a large bowl, combine the blanched broccoli florets, bacon pieces, shredded cheddar cheese, diced red onion, and sunflower seeds.

Step 6

In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, erythritol sweetener, salt, and black pepper to make the dressing.

Step 7

Pour the dressing over the broccoli mixture and toss gently until everything is well coated.

Step 8

Cover the salad and refrigerate for at least 1 hour to allow the flavors to meld together.

Step 9

Before serving, give the salad a final stir and adjust seasoning if necessary. Enjoy your Keto Broccoli Salad as a side dish or a light meal.
