Ingredients

  • 500 grams Brinjal (eggplant)
  • 3 tablespoons Coconut oil
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Cumin seeds
  • 1 medium-sized, finely chopped Onion
  • 3 finely minced Garlic cloves
  • 1 teaspoon, freshly grated Ginger
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Red chili powder
  • 1 teaspoon Coriander powder
  • 200 ml Coconut milk
  • 1 teaspoon (or to taste) Salt
  • 2 tablespoons, chopped for garnish Fresh cilantro

Directions

Step 1

1. Wash and cut the brinjals (eggplants) into bite-sized cubes and set aside.

2. Heat coconut oil in a pan over medium heat. Add mustard seeds and cumin seeds, and let them splutter.

3. Add the chopped onions and sauté until they turn golden brown.
