  • 4 pounds beef short ribs
  • 3 tablespoons olive oil
  • 1.5 teaspoons salt

  • 1 cup red wine
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 2 sprigs fresh thyme
  • 2 bay leaves

Directions

Step 1

Preheat your oven to 325°F (165°C).

Season the beef short ribs generously with salt and pepper on all sides.

Heat olive oil in a large Dutch oven over medium-high heat.

Add the short ribs in batches, browning them on all sides, about 10 minutes total. Transfer the browned ribs to a plate and set aside.
