  • 4 pieces Lamb shanks
  • 4 tablespoons Olive oil
  • 1 teaspoon Salt

  • 1 large Onion, chopped
  • 4 pieces Garlic cloves, minced
  • 1 medium Carrot, chopped
  • 2 pieces Celery stalks, chopped
  • 2 tablespoons Tomato paste
  • 1 cup Red wine
  • 2 cups Beef broth
  • 1 piece Bay leaf
  • 2 sprigs Fresh rosemary
  • 3 sprigs Fresh thyme

Directions

Step 1

Preheat your oven to 325°F (163°C).

Step 2

Pat the lamb shanks dry with paper towels and season them generously with salt and black pepper.

Step 3

In a large ovenproof pot or Dutch oven, heat the olive oil over medium-high heat.

Once the oil is hot, add the lamb shanks two at a time, browning them on all sides. This should take about 8 minutes per batch. Remove the shanks from the pot and set aside.

In the same pot, add the chopped onion, garlic, carrot, and celery. Cook until the vegetables are soft, about 5 to 7 minutes.
