Ingredients

  • 2 pounds lamb shoulder
  • 1 teaspoon salt
  • 1 teaspoon black pepper

  • 1 medium onion, diced
  • 4 garlic cloves, minced
  • 2 fresh rosemary sprigs
  • 4 fresh thyme sprigs
  • 2 cups beef broth
  • 2 tablespoons red wine vinegar
  • 1 tablespoon tomato paste
  • 1 bay leaf
  • 8 ounces mushrooms, sliced
  • 1 zucchini, chopped

Directions

Step 1

Preheat your oven to 325°F (163°C).

Season the lamb shoulder with salt and black pepper on both sides.

Heat olive oil in a Dutch oven over medium-high heat. Brown the lamb on all sides, about 4-5 minutes per side, then remove it from the pot and set aside.
