Ingredients

  • 6 pieces chicken thighs (bone-in, skin-on)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 3 cloves garlic cloves, minced
  • 1 medium onion, chopped
  • 1 cup chicken broth
  • 0.5 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 cups fresh spinach leaves
  • 1 tablespoon lemon juice

Directions

Step 1

Season the chicken thighs with salt and pepper on both sides.

Step 2

Heat olive oil in a large skillet or Dutch oven over medium-high heat.

Step 3

Add the chicken thighs, skin-side down, and sear them for about 5-6 minutes per side until golden brown. Remove chicken and set aside.

Step 4

In the same pan, add the minced garlic and chopped onion. Sauté for 2-3 minutes until the onion is translucent.

Step 5

Pour in the chicken broth, scraping the bottom of the pan to deglaze and lift all the flavorful bits.

Step 6

Stir in the heavy cream, thyme, and rosemary, and bring to a gentle simmer.

Step 7

Return the chicken thighs to the pan, skin-side up, and reduce the heat to low. Cover and let it simmer for 20 minutes.

Step 8

After 20 minutes, uncover and add the fresh spinach leaves. Stir gently into the sauce and let them wilt, cooking for another 5 minutes.

Step 9

Squeeze in the lemon juice and stir to combine.

Step 10

Serve immediately, spooning the creamy sauce over the chicken.
