  • 2 pounds beef tips
  • 3 tablespoons olive oil
  • 1 large onion, finely chopped

  • 2 tablespoons red wine vinegar
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 3 sprigs fresh thyme
  • 1 unit bay leaf
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons butter
  • 8 ounces mushrooms, sliced
  • 2 tablespoons parsley, chopped (for garnish)

Directions

Step 1

Season the beef tips with salt and pepper. Heat 2 tablespoons of olive oil in a large Dutch oven or heavy pot over medium-high heat.

Add the beef tips in batches and sear until browned on all sides. Avoid overcrowding the pot. Once browned, remove the beef tips and set aside.

In the same pot, add the remaining 1 tablespoon of olive oil. Add the chopped onions and sauté until they become translucent, about 5 minutes.
