  • 4 lbs beef short ribs
  • 2 tsp sea salt
  • 1 tsp black pepper
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 4 garlic cloves, minced
  • 2 cups beef broth
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tbsp balsamic vinegar
  • 2 bay leaves

Directions

Step 1

Preheat your oven to 325°F (160°C).

Step 2

Pat the beef short ribs dry with paper towels and season them with 1 teaspoon of salt and 1 teaspoon of black pepper.

Step 3

In a large oven-safe pot or Dutch oven, heat olive oil over medium-high heat. Once hot, add the short ribs in batches and brown them on all sides, about 8 minutes per batch. Remove the ribs and set them aside.

In the same pot, add the chopped onion and cook until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
