  • 3 pounds Beef short ribs
  • 1 tablespoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Avocado oil
  • 1 large Onion
  • 4 cloves Garlic cloves
  • 2 tablespoons Tomato paste
  • 2 cups Beef broth
  • 1 tablespoon Red wine vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 leaf Bay leaf
  • 4 sprigs Fresh thyme
  • 8 ounces Sliced mushrooms
  • 1 teaspoon Chopped rosemary

Directions

Step 1

Preheat your oven to 325°F (165°C).

Step 2

Season the beef ribs generously with salt and black pepper.

Step 3

In a large Dutch oven, heat avocado oil over medium-high heat. Sear the ribs until browned on all sides, approximately 2-3 minutes per side. Work in batches if necessary. Remove the ribs and set aside.

Lower the heat to medium. Add the chopped onion to the same pot and sauté until translucent, about 5 minutes.

Add the minced garlic to the pot with the onion and sauté for another minute until fragrant.
