Ingredients

  • 1 cup Almond flour
  • 1 tablespoon Psyllium husk powder
  • 0.5 teaspoon Xanthan gum
  • 4 whole Large eggs
  • 1 tablespoon Olive oil
  • 1 pound Lean ground beef
  • 1 medium, diced Onion
  • 3 minced Garlic cloves
  • 2 tablespoons Tomato paste
  • 1 cup Crushed tomatoes
  • 1 teaspoon, dried Oregano
  • 1 teaspoon, dried Basil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 cup, grated Parmesan cheese
  • 2 tablespoons, chopped Fresh parsley

Directions

Step 1

In a large mixing bowl, combine almond flour, psyllium husk powder, and xanthan gum. Mix well.

Step 2

Add in the eggs and olive oil, stirring until a dough forms. Knead the dough for a couple of minutes until smooth.

Step 3

Cover the dough with plastic wrap and let it rest for 10 minutes.

Step 4

Dust a clean work surface with a bit of almond flour. Roll out the dough until it's about 1/16 inch thick.

Step 5

Using a sharp knife or pizza cutter, cut the dough into bowtie shapes or small rectangles. Set aside to dry slightly while preparing the sauce.

Step 6

In a large pan over medium heat, add the ground beef. Cook, breaking it apart with a spoon, until browned and cooked through.

Step 7

Add the diced onion and minced garlic to the pan. Sauté for about 3 minutes until the onion becomes translucent.

Step 8

Stir in the tomato paste and cook for another minute.

Step 9

Add the crushed tomatoes, oregano, basil, salt, and black pepper. Mix well and let the sauce simmer for about 20 minutes until thickened.

Step 10

While the sauce is simmering, bring a large pot of water to a boil and add a pinch of salt.

Step 11

Gently drop the prepared keto pasta into the boiling water and cook for 2-3 minutes. The pasta should float when done.

Step 12

Drain the pasta using a colander and transfer it into the meat sauce. Toss gently to combine.

Step 13

Serve the pasta hot, topped with grated Parmesan cheese and fresh parsley.
