Ingredients

  • 1.5 cups Almond flour
  • 0.25 cup Coconut flour
  • 0.25 cup Erythritol
  • 2 teaspoons Baking powder
  • 0.25 teaspoon Salt
  • 3 large Eggs
  • 1 teaspoon Vanilla extract
  • 1 cup Heavy cream
  • 0.5 cup Sugar-free chocolate chips
  • 0.25 cup Butter
  • 1 package Sugar-free vanilla pudding mix
  • 2 cups Water

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a donut pan well.

Step 2

In a large mixing bowl, whisk together almond flour, coconut flour, erythritol, baking powder, and salt.

Step 3

In another bowl, beat together the eggs and vanilla extract.

Step 4

Add the egg mixture to the dry ingredients and mix until combined. The batter will be thick.

Step 5

Spoon the batter into the prepared donut pan, filling each mold about 3/4 full.

Step 6

Bake the donuts in the preheated oven for 15-20 minutes or until a toothpick inserted into the center comes out clean.

Let donuts cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.

To make the vanilla cream, prepare the sugar-free vanilla pudding mix with 2 cups of water as per package instructions and chill until thickened.
