Ingredients

  • 2 cans (15 oz) canned black soybeans
  • 4 bacon slices
  • 1 medium onion, diced
  • 0.25 cup sugar-free maple syrup
  • 2 tablespoons tomato paste
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon yellow mustard
  • 1 teaspoon liquid smoke
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup water

Directions

Step 1

Preheat your oven to 325°F (163°C).

Step 2

Drain and rinse the black soybeans under cold water and set aside.

Step 3

In a large oven-safe pot or Dutch oven, cook the bacon slices over medium heat until crispy. Remove the bacon and chop it into small pieces. Set aside, reserving the bacon fat in the pot.

Step 4

Add the diced onion to the bacon fat and sauté over medium heat until translucent, about 5 minutes.

Step 5

Stir in the sugar-free maple syrup, tomato paste, apple cider vinegar, yellow mustard, liquid smoke, salt, black pepper, and water. Mix well to combine.

Step 6

Add the drained soybeans and chopped bacon to the pot, stirring to ensure everything is well mixed.

Step 7

Bring the mixture to a simmer, then cover the pot and transfer to the preheated oven.

Step 8

Bake for 2 hours, stirring every 30 minutes to ensure even cooking and flavor distribution.

Step 9

After 2 hours, remove the lid and bake for an additional 15-20 minutes to thicken the sauce, if desired.

Step 10

Remove from the oven and let cool slightly before serving.
