Ingredients

  • 1.5 pounds boneless skinless chicken thighs
  • 1 cup almond flour
  • 0.5 cup parmesan cheese, grated
  • 0.25 cup coconut flour
  • 2 large eggs
  • 0.25 cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon baking powder
  • 2 cups oil for frying (avocado or coconut)

Directions

Step 1

Cut the boneless skinless chicken thighs into 1.5 to 2 inch pieces.

Step 2

In a medium mixing bowl, whisk together the eggs and heavy cream until well combined.

Step 3

In another bowl, mix the almond flour, grated parmesan cheese, coconut flour, garlic powder, onion powder, paprika, salt, black pepper, and baking powder.

Step 4

Heat oil in a large heavy skillet or deep fryer to 350°F (175°C).

Step 5

Dip each chicken piece into the egg mixture first, allowing any excess to drip off.

Step 6

Then dredge the chicken in the flour mixture, pressing firmly to adhere.

Step 7

Carefully place the coated chicken pieces in the hot oil, frying in batches to avoid overcrowding.

Step 8

Fry the chicken for 5-7 minutes on each side until golden brown and cooked through, ensuring the internal temperature reaches 165°F (74°C).

Step 9

Remove the chicken pieces from oil and place them on a wire rack to drain excess oil.

Step 10

Serve the fried chicken warm with keto-friendly dipping sauces or sides.
