  • 100 grams Pork Fat
  • 30 milliliters White Vinegar
  • 10 grams Coarse Salt
  • 5 grams Coarsely Ground Black Pepper
  • 10 grams Coriander Seeds
  • 1 teaspoon Ground Cloves
  • 1 teaspoon Nutmeg
  • 5 grams Smoked Paprika
  • 3 cloves Garlic, minced
  • 2 meters Natural Sausage Casings

Directions

Step 1

Begin by preparing your coriander seeds by lightly toasting them in a dry skillet over medium heat for about 2-3 minutes until they become fragrant. Allow them to cool, then coarsely grind them using a mortar and pestle or a spice grinder.

In a large mixing bowl, combine the ground beef, ground pork, and pork fat. Make sure the meat is cold to prevent the fat from melting.

Add the white vinegar, coarse salt, black pepper, toasted and ground coriander, ground cloves, nutmeg, smoked paprika, and minced garlic. Mix the ingredients thoroughly with your hands to ensure even distribution of the spices throughout the meat.
