Ingredients

  • 1 pound beef sirloin
  • 2 teaspoons coarse black pepper
  • 3 tablespoons soy sauce (tamari for gluten-free)
  • 1 tablespoon sesame oil
  • 2 tablespoons olive oil
  • 3 cloves garlic cloves
  • 1 tablespoon ginger
  • 1 whole red bell pepper
  • 1 whole green bell pepper
  • 3 stalks scallions
  • 0.5 teaspoon xanthan gum
  • 0.5 cup water

Directions

Step 1

Slice the beef sirloin into thin strips. This allows the meat to cook quickly and remain tender.

Step 2

In a medium bowl, mix the beef strips with 1 tablespoon of soy sauce and 1 teaspoon of black pepper. Let it marinate for about 10 minutes while preparing the vegetables.

Step 3

Mince the garlic and finely chop the ginger.

Step 4

Slice the red and green bell peppers into thin strips and set aside.

Step 5

Chop the scallions into 1-inch pieces and separate the white parts from the green parts.

Step 6

Heat a large skillet or wok over medium-high heat and add the olive oil.

Step 7

Add the marinated beef strips to the skillet in batches to avoid overcrowding. Sear for about 2-3 minutes on each side until the meat is browned. Remove the beef from the skillet and set aside.

Step 8

In the same skillet, add sesame oil. Stir-fry the minced garlic and ginger until fragrant, about 30 seconds.

Step 9

Add the bell peppers and white parts of the scallions, and stir-fry for another 2-3 minutes until they are tender-crisp.

Step 10

Return the beef to the skillet. Add the remaining soy sauce, black pepper, and water.

Step 11

Sprinkle xanthan gum over the mixture, stirring quickly to thicken the sauce. This should take about 1 minute.

Step 12

Toss the beef and vegetable mixture until well coated with the sauce.

Step 13

Garnish with the green parts of the scallions before serving.

Step 14

Serve the Keto Black Pepper Beef hot as a standalone dish or with a side of cauliflower rice for a complete keto meal.
