Ingredients

  • 2 cups almond flour
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon garlic powder
  • 0.5 cup unsalted butter, melted
  • 1.5 cups mozzarella cheese, shredded
  • 2 ounces cream cheese
  • 2 large egg
  • 1 pound breakfast sausage
  • 1.5 cups heavy cream
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon xanthan gum
  • 0.5 cup water

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a large microwave-safe bowl, combine the mozzarella cheese and cream cheese. Microwave in 30-second intervals, stirring in between, until melted and combined.

Step 3

Add the almond flour, baking powder, salt, and garlic powder to the cheese mixture and stir to combine. Add the eggs and continue mixing until a dough forms.

Step 4

Divide the dough into 6 equal portions and form each portion into a biscuit shape. Place the biscuits onto the prepared baking sheet.

Step 5

Brush the tops of the biscuits with melted butter.

Step 6

Bake the biscuits in the preheated oven for 15-20 minutes, or until golden brown.

Step 7

While the biscuits are baking, start preparing the sausage gravy. In a large skillet over medium heat, crumble and cook the sausage until browned and cooked through.

Step 8

Reduce the heat to low, add heavy cream, and bring the mixture to a simmer.

Step 9

Slowly sprinkle xanthan gum over the gravy while constantly whisking to prevent clumping.

Step 10

Add water a little at a time, continuing to whisk until the gravy reaches your desired consistency.

Step 11

Season the gravy with ground black pepper.

Step 12

Serve the warm biscuits with sausage gravy poured over top.
