Ingredients

  • 2 pounds beef chuck roast
  • 5 whole dried guajillo chilies
  • 3 whole dried ancho chilies
  • 2 tablespoons apple cider vinegar
  • 6 whole garlic cloves
  • 4 cups beef broth
  • 3 whole bay leaves
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 0.5 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 whole, chopped small onion
  • 2 tablespoons olive oil
  • 8 whole keto-friendly tortillas
  • 0.5 cup, chopped cilantro
  • 1 whole, cut into wedges lime

Directions

Step 1

Soak the guajillo and ancho chilies in hot water for about 15 minutes until softened, then remove stems and seeds.

Step 2

Place chilies, apple cider vinegar, garlic, half of the chopped onion, cumin, oregano, cinnamon, salt, and pepper in a blender. Add 1 cup of beef broth and blend until smooth to create the adobo sauce.

Step 3

Cut beef chuck roast into large chunks. In a large pot, heat olive oil over medium-high heat. Sear the beef on all sides until browned.

Pour the adobo sauce over the beef, add the remaining beef broth, and bay leaves. Bring to a simmer, then cover pot and reduce heat to low.

Let the beef simmer for about 3 to 4 hours until it's tender and easily shreds with a fork.

Remove the beef from the pot and shred using two forks. Return shredded beef to the pot and mix with sauce.
