Ingredients

  • 2 cups Coconut cream
  • 1 cup Unsweetened almond milk
  • 0.5 cup Erythritol sweetener
  • 0.5 cup Chia seeds
  • 0.25 cup Coconut flakes
  • 0.25 cup Flaxseed meal
  • 1 teaspoon Almond extract
  • 2 whole Pandan leaves
  • 0.25 teaspoon Sea salt
  • 1 tablespoon Black sesame seeds (optional for topping)

Directions

Step 1

In a large saucepan, combine the coconut cream, unsweetened almond milk, and pandan leaves.

Step 2

Place the saucepan over medium heat and bring the mixture to a gentle simmer. Stir occasionally to prevent sticking.

Step 3

Once simmering, remove the pandan leaves from the mixture.

Step 4

Add the erythritol sweetener, chia seeds, coconut flakes, flaxseed meal, almond extract, and sea salt to the saucepan.

Step 5

Stir well to combine all the ingredients. Continue cooking over medium-low heat for about 10-15 minutes, until the mixture has thickened slightly.
