Ingredients

  • 450 grams Cauliflower rice
  • 240 milliliters Coconut cream
  • 60 grams Powdered erythritol
  • 2 tablespoons Coconut oil
  • 2 tablespoons Coconut flour
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Salt

Directions

Step 1

Prepare the cauliflower rice by processing cauliflower florets in a food processor until they resemble rice grains.

Step 2

In a large frying pan, melt the coconut oil over medium heat. Add the cauliflower rice and stir-fry for 5 minutes until softened.

Step 3

Pour in the coconut cream and stir the cauliflower rice. Let it simmer for about 10 minutes, stirring occasionally until the mixture begins to thicken.

Step 4

Add the powdered erythritol, coconut flour, vanilla extract, ground cinnamon, and salt to the pan. Stir well to incorporate all ingredients.

Step 5

Continue cooking the mixture over low heat for an additional 10 minutes, stirring often to prevent it from sticking to the pan.

Step 6

Once the mixture reaches a thick, sticky consistency, transfer it to a greased 8-inch round or square baking dish.

Step 7

Flatten the top and allow it to cool for at least 30 minutes to an hour. This will help it set properly.

Step 8

Slice into desired portions and serve warm or at room temperature.
