Ingredients

  • 500 grams fresh okra (bhindi), washed and dried
  • 3 tablespoons ghee or coconut oil
  • 1 teaspoon cumin seeds
  • 1.5 teaspoons coriander powder
  • 0.5 teaspoon turmeric powder
  • 0.5 teaspoon red chili powder
  • 0.5 teaspoon garam masala
  • 1 teaspoon salt
  • 2 medium onions, finely sliced
  • 2 green chilies, slit
  • 1 tablespoon lemon juice
  • 2 tablespoons cilantro, chopped (for garnish)

Directions

Step 1

Start by washing the okra thoroughly. Dry them well using a kitchen towel to prevent sliminess during cooking.

Step 2

Slice off the head and tail of each okra pod and cut them into 1-inch pieces.

Step 3

Heat ghee or coconut oil in a large pan over medium heat.

Step 4

Add cumin seeds to the hot oil and let them splutter for about 30 seconds.

Add the sliced onions to the pan and sauté until they become translucent, about 3-4 minutes.

Stir in the green chilies and cook for another minute.
