  • 500 grams Okra (Bhindi)
  • 3 tablespoons Coconut oil
  • 0.5 teaspoon Mustard seeds
  • 0.5 teaspoon Cumin seeds
  • 1 medium, thinly sliced Onion
  • 3 cloves, minced Garlic
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Coriander powder
  • 0.5 teaspoon Red chili powder
  • 0.5 teaspoon Garam masala
  • 0.75 teaspoon, or to taste Salt
  • 1 tablespoon Lemon juice
  • 2 tablespoons, chopped Fresh cilantro

Directions

Step 1

Wash the okra thoroughly and pat it dry with a clean kitchen towel. Ensure it is completely dry, as excess moisture can make the okra slimy when cooked.

Step 2

Cut the okra into 1/2-inch pieces, discarding the tops.

Step 3

Heat coconut oil in a large pan over medium heat. Once hot, add the mustard seeds and cumin seeds. Allow them to crackle for a few seconds.

Add the sliced onion and sauté until they turn golden brown, about 4-5 minutes.

Add the minced garlic and sauté for another 1-2 minutes until fragrant.

Stir in the turmeric powder, coriander powder, red chili powder, and garam masala. Mix well and cook for 1 minute to blend the spices.

Add the okra pieces and sauté for about 5 minutes on medium heat, stirring occasionally.

Reduce the heat to low, cover the pan, and cook the okra for about 10-12 minutes, stirring occasionally to ensure it doesn't stick to the bottom. Cook until the okra is tender but still has a slight bite.

Remove the lid, increase the heat to medium-high, and sauté for another 3-4 minutes to slightly crisp up the okra.

Season with salt and lemon juice. Mix well and garnish with freshly chopped cilantro before serving.
